Artichoke, Lemon, and Asparagus Pasta
Ingredients
Ingredients:
1-2 artichokes
½ yellow onion sliced thinly
1 bunch of asparagus
1 tablespoon of meyer lemon olive oil
juice & zest of 1 lemon
Pasta
2 cloves of garlic
salt/pepper
Parmesan cheese
Instructions
Begin by cooking your artichoke (either steaming or roasting) cut off the artichoke heart into slices and set aside (save the leaves for a delicious snack while cooking)
Add chopped garlic, asparagus, and onion to a pan on medium heat with meyer lemon olive oil and salt and pepper. Cook until softened and aromatic
Boil a pot of salted water and add pasta. Cook until al dente
Add artichokes, pasta and 1 tablespoon of pasta water to the pan
Top with grated parmesan cheese and lemon zest. Add extra olive oil if needed.
