Heirloom Tomato Salad with Cilantro Scallion Sauce and Crispy Tortilla Strips

 
 

Ingredients

 
  • 1 bowl of salad mix 

  • 1 bunch of cilantro 

  • 2-3 scallions roughly chopped 

  • 1 tortilla

  • 2 tablespoons of olive oil

  • 1 tablespoon of white vinegar 

  • salt/pepper 

  • 2 garlic cloves 

  • 1 lb. of heirloom tomatoes


Instructions

  • To make the sauce, combine cilantro, scallions, salt/pepper, garlic, olive oil, and vinegar in a blender or food processor and blend until well combined. Add more olive oil as needed. 

  • To make the tortilla strips roll a flour tortilla and cut it into thin pieces to form strips. Heat a frying pan on medium heat with ½ tablespoon of olive oil and add tortilla strips. Flip frequently until the strips are crispy and golden brown.

  • To prepare the salad, dice tomatoes and add to a bowl with fresh salad greens, top with cilantro scallion sauce, tortilla strips, and fresh scallions. Enjoy it as a fresh Summer side dish or combine it with rice and black beans for a filling salad!
