Fried Pepper Pizza with Saladettes and Basil Oil
Ingredients
Pizza dough of choice (liberty frozen dough is recommended)
1 pint Saladettes
1 bunch of basil
0.5 lbs of Jimmy Nardello Peppers
½ pint of Shishitos
Olive oil
Balsamic vinegar
2-3 garlic cloves
Cheese of choice: Mozzarella and Ricotta recommended
Instructions
Basil Oil:
(Set aside a few leaves for sauce and garnish)
Bring a pot of water to boil and submerge basil for 10 seconds then place in an ice bath.
Add basil and ¼ cup of olive oil to a food processor or blender and mix on high.
Strain and Pour mixture into a jar or bottle through a cheesecloth and set aside
Sauce:
Blend tomatoes, a few basil leaves, garlic cloves, ½ cup of olive oil, 2 tablespoons of balsamic vinegar and salt and pepper in a food processor or blender until smooth
Pour into a pot and bring to a boil on the stove then let simmer until sauce thickens (approximetely 30 min)
Pizza:
Preheat oven to 550 degrees (or as hot as your oven will heat)
Stretch pizza dough onto a baking sheet
Layer sauce and cheese on top of dough
In a hot cast Iron skillet or non stick pan fry peppers until slightly charred, flipping consistently to evenly blister
Add peppers to pizza and bake until pizza is cooked through
Top pizza with a drizzle of basil oil and fresh basil leaves
