Fingerling Potato, Corn, Green Bell Pepper Hash with Sage

 
 

Ingredients

 
  • 1 pound fingerling potatoes diced

  • 1 cup fresh corn kernels

  • 1 green bell pepper, diced

  • 2-3 tablespoons olive oil

  • 2 cloves garlic, minced

  • 2-3 fresh sage leaves, finely chopped

  • Salt and pepper to taste


Instructions

  1.    Preheat the Oven: Preheat your oven to 425°F (220°C) and position the rack in the middle.

  2. Prepare the Sheet Pan: Line a large baking sheet with parchment paper or lightly grease it to prevent sticking.

  3. Prepare the Vegetables: In a large bowl, combine the halved fingerling potatoes, green bell pepper, and corn kernels. Drizzle the olive oil over the vegetables, add the minced garlic, dried sage (or fresh sage if using), and season with salt and pepper. Toss everything together until the vegetables are evenly coated with the oil and seasoning. Transfer the seasoned vegetables to the prepared sheet pan, spreading them out in an even layer..
