Purple Potato Salad with Shallots and Dill
Ingredients
1.5 pounds purple potatoes, scrubbed and diced into bite-sized pieces
1 shallots, finely chopped
1/4 cup fresh dill, chopped
1/4 cup mayonnaise
2 tablespoons Dijon mustard
Salt, to taste
Freshly ground black pepper, to taste
Instructions
Place the diced purple potatoes in a large pot of salted water. Bring the water to a boil and cook the potatoes until they are fork-tender, about 10-15 minutes.
Drain the potatoes and let them cool to room temperature.
In a small bowl, mix together the mayonnaise, Dijon mustard, and chopped dill. Add salt and black pepper to taste
In a large mixing bowl, combine the cooled purple potatoes, chopped shallots, and the prepared dressing.
Garnish with additional chopped dill for a fresh touch.
