Purple Potato Salad with Shallots and Dill

 
 

Ingredients

 
  • 1.5 pounds purple potatoes, scrubbed and diced into bite-sized pieces

  • 1 shallots, finely chopped

  • 1/4 cup fresh dill, chopped

  • 1/4 cup mayonnaise

  • 2 tablespoons Dijon mustard

  • Salt, to taste

  • Freshly ground black pepper, to taste




Instructions

  1. Place the diced purple potatoes in a large pot of salted water. Bring the water to a boil and cook the potatoes until they are fork-tender, about 10-15 minutes.

  2. Drain the potatoes and let them cool to room temperature.

  3. In a small bowl, mix together the mayonnaise, Dijon mustard, and chopped dill. Add salt and black pepper to taste

  4.  In a large mixing bowl, combine the cooled purple potatoes, chopped shallots, and the prepared dressing.

  5. Garnish with additional chopped dill for a fresh touch.
