Summer Corn Ravioli with Chives and Tomato
Ingredients
Fresh Ravioli of choice (Pasta queen is recommended)
1-2 heirloom tomatoes chopped
¼ cup of olive oil
Salt and pepper to taste
¼ cup of chives
1 ear of corn
Instructions
Roughly chop tomatoes and add to a blender or food processor with olive oil, salt, and pepper. Blend until smooth and set aside.
Place corn on a hot cast iron skillet and grill until charred. Set aside and let cool.
Boil water and add ravioli, stir until ravioli floats to the surface. Strain and rinse in cold water.
Using a knife, chop kernels off of corn into a large bowl. Add ravioli and tomato sauce to the corn.
Finely chop chives and add to pasta. Mix well and serve hot or chilled.
