Roasted Summer Squash with a Spicy Cucumber Sauce

 
 

Ingredients

 
  • Summer squash, sliced thinly 

  • 2 cucumbers chopped roughly 

  • 1 chopped jalapeno (with or without seeds depending on desired level of spice) 

  • ¼ cup of olive oil 

  • 2 cloves of garlic

  • salt and pepper to taste

  • 1 tablespoon of lemon juice or white vinegar 

  • ¼ cup of scallions 

  • Optional: 1 handful of basil leaves


Instructions

  1. Preheat oven to 350 degrees 

  2. Slice your summer squash and add to a greased pan with salt and pepper 

  3. While roasting your squash begin to make the spicy cucumber sauce 

  4. Add cucumbers, jalapeno, olive oil, lemon juice or vinegar, scallions, and garlic and basil to a blender or food processor. Puree until smooth and add salt and pepper to taste 

  5. Roast squash until soft and serve with spicy cucumber sauce 

  6. Add additional chopped scallions to garnish and serve.
