Pizza with Rainbow Chard, Apricots, Garlic Scapes and Prosciutto
Ingredients
Pizza dough (Liberty is recommended)
1 tablespoon of Olive Oil
2-3 garlic scapes finely minced
1 bunch of Rainbow Chard
2-3 Apricots
2-3 slices of Prosciutto
Low Moisture Mozzarella
Aged balsamic vinegar (Calolea is recommended)
salt/pepper
InstructionsPreheat oven to 500 degrees
Roll out pizza dough until thin and place on a large baking sheet. To keep the dough from sticking, sprinkle cornmeal on the underside of the dough.
Drizzle olive oil on the dough and add finely chopped garlic scapes.
Roughly tear chard leaves and layer on top.
Thinly slice the apricot and layer on top of the chard.
Add mozzarella cheese to your desired amount and top with salt and pepper
Bake for 20-25 minutes or until the crust is golden and the cheese is bubbly.
Allow to cool slightly and top with prosciutto and balsamic vinegar
