Quesadillas with Asian Pear Salsa

 
 

Ingredients

 
  • Tortilla of choice (we recommend El Rosal flour tortillas) 

  • Cheese of choice

  • 2 Shinko Pears 

  • 1 shallot

  • 1-2 yellow bell peppers

  • 1 bunch of cilantro leaves

  • 1 lb of slicing tomatoes 

  • Optional: hot peppers of choice 

  1. Optional: ¼ cup of Lime Juice


Instructions

  1. dice peppers, shallots, tomatoes and pears into small pieces and place in a large bowl.

  2. Finely chop cilantro and add lime juice, salt and pepper to the salsa 

  3. Mix thoroughly and set aside. 

  4. Shred cheese of choice (approximately ½ cup) 

  5. Place tortilla in a hot pan on the stove and add cheese 

  6. Optional: add toppings of choice (Kale is recommended) 

  7. Allow Cheese to melt thoroughly and the outside of the tortilla to become crispy. Fold and Flip! 

  8. Slice into triangles and serve hot with a side of pear salsa!
