Beet, Goat Cheese, and Toasted Walnut Salad with Blood Orange Dressing

 
 

Ingredients

 
  • 1 blood orange 

  • 1 meyer lemon

  • 1.5 lbs of mixed beets 

  • Equal parts spinach and kale

  • 1 cup of walnut halves 

  • ¼ cup of goat cheese 

  • ¼ cup of olive oil 

  • 1 tablespoon of balsamic vinegar


Instructions

  1. Preheat oven to 400 degrees 

  2. Scrub each beet and wrap in tinfoil, place on a baking sheet and bake for approximately 1 hour or until beets are tender. 

  3. To make the vinaigrette: combine the juice of 1 meyer lemon, 1 blood orange, ¼ cup of olive oil, 1 tablespoon of balsamic vinegar. Season with salt and pepper and shake or stir to combine. 

  4. Heat a pan over medium heat and add walnuts, toast until fragrant, only a few minutes. 

  5. Once the beets have cooled slightly, slice into cubes. Assemble salad by mixing greens, beets, walnuts, and goat cheese. Pour dressing over salad and mix thoroughly.
