Blood Orange Bars
Ingredients
Ingredients for the crust:
1 cup of softened butter
½ cup of white sugar
2 cups of flour
½ teaspoon of salt
Ingredients for the filling:
6 eggs
2 cups of sugar
1 cup of fresh squeezed blood orange juice
1 cup of flour
Optional: ¼ cup of lemon juice
optional : powdered sugar
1 tablespoon of blood orange zest
Instructions
Line a 9 by 13 inch baking sheet with parchment paper
Preheat oven to 350 degrees
Mix together sugar and butter for the crust until whipped. Add in salt and flour and press into the baking sheet
Bake for 25 minutes or until the edges start to brown.
In a large bowl mix together eggs, sugar, blood orange juice and half of the blood orange zest. Slowly add in flour 1 tablespoon at a time until evenly combined.
Allow crust to cool for 20 minutes and pour in filling
Bake for 25 minutes until filling is set but still wiggles slightly (careful not to overbake)
Allow to cool completely and top with a dusting of powdered sugar and the rest of the zest.
