Roasted Delicata Rings with Spicy Tomato Sauce
Ingredients
1 delicata squash
1 lb. of tomatoes
1 cayenne pepper
1 teaspoon of sugar
1 tablespoon of balsamic vinegar
1 tablespoon of olive oil
salt/pepper
A handful of basil leaves
Instructions
Preheat the oven to 350 degrees
Slice Delicata squash into thin rings and lay on a greased baking sheet.
Top squash with ½ tablespoon olive oil, salt, and pepper and cook for 20-30 minutes flipping halfway through until squash is golden and starting to brown.
To make the tomato sauce, chop the tomatoes and add to a saucepan on medium heat.
Thinly slice cayenne pepper and add to the tomatoes along with balsamic, sugar, salt and the rest of the olive oil.
Allow the sauce to cook down until it has reached your desired texture.
Add sauce to a plate or bowl and top with Delicata rings and chopped basil leaves.
