Blistered Shishito Peppers with Garlic Beet Aioli
Ingredients
¼ cup of homemade or store bought mayonnaise
3-4 cloves of garlic
1 small beet
Salt and pepper
1 tablespoon of olive oil
1 pint of shishito peppers
Cilantro leaves to garnish
Sesame seeds to garnish
Instructions
Preheat the oven to 400 degrees.
Wash and peel one small beet and wrap it in tinfoil. Place on a baking sheet and bake in the oven for 20-30 minutes or until the beet is soft.
In a blender or food processor combine mayonnaise, garlic, salt, pepper, and the beet and blend until smooth.
Heat a frying pan over medium heat and add 1 tablespoon of olive oil.
Cook shishitos until they begin to blister, flipping so each side is evenly cooked.
To serve, add aioli to a plate and top with blistered shishito peppers, sesame seeds, and cilantro.
