Ginger and Satsuma Mandarin Glazed Carrots Ingredients
Ingredients
1 lb of Carrots peeled
¼ lb of ginger peeled
1/2 cup of water
2-3 mandarins peeled
Salt and pepper to taste
¼ cup of honey
Instructions
Begin by preheating oven to 350 degrees
Line a baking sheet with parchment paper
Place peeled ginger, mandarins, water and honey in a blender and blend until thoroughly mixed, adding more water if necessary.
Strain mixture through cheesecloth and add salt and pepper.
Optional: marinate carrots in ginger/mandarin mixture for several hours in the fridge.
If skipping this step, coat carrots in mixture, saving a small amount for later.
Roast carrots in the oven until soft and drizzle with more mandarin, ginger, honey after removing from the oven.
Serve as part of a salad or on their own as a side dish.
