Garlic Chive Potato Pancakes with Pomegranate Applesauce
Ingredients
2 lbs of gold potatoes
3 cloves of garlic
1 bunch of chives
1 lb of apples
1 pomegranate
1 cup of flour
1 egg beaten
Salt and pepper
½ cup of vegetable oil for frying
½ cup of sugar
1 teaspoon of cinnamon
Instructions
Grate potatoes into a bowl. Add minced garlic, salt and pepper, chopped chives, beaten egg and flour. Mix together and form into pancakes adding more flour as needed.
In a pan with hot oil fry pancakes flipping until golden brown on each side. Set aside.
To make applesauce, peel apples and add to a pot with ¾ cup of water, and sugar.Once apples are soft mash or puree with an immersion blender until desired texture is reached. Add cinnamon.
Seed pomegranate and add ½ of the seeds and juice into the sauce.
Serve pancakes with pomegranate applesauce and top with extra pomegranate seeds.
