Roasted Green Garlic and Carrot Hummus

 
 

Ingredients

 

Ingredients:

  • Approximately 1 lb. of carrots 

  • ¼ cup of tahini paste 

  • 1 can of garbanzo beans 

  • ¼ cup of olive oil

  • The juice of 1 lemon 

  • Smoked Paprika 

  • Salt

  • 1 bunch of green garlic   

  • ½ lb. of Sugar Snap Peas for serving


Instructions

  1. Preheat oven to 400 degrees 

  2. Roughly chop 1 lb. of carrots and add to a sheet pan coated with olive oil and salt. 

  3. Finally chop green garlic and add to the sheet pan

  4. Roast carrots and green garlic for roughly 30 minutes or until soft. 

  5. In a food processor or blender add ¼ cup of olive oil, garbanzo beans, tahini, lemon juice, roasted carrots and garlic and blend until smooth adding water as needed to adjust the texture. 

  6. Mix in 1 teaspoon of smoked paprika and optional spicy chili salt from the Radish Hotel.

  7. Serve hummus cold or warm with chopped spring vegetables including snap peas, carrots and radish.
