Spring Pasta with Spinach Mint Sauce and Snap Peas
Ingredients
1 bunch of mint
1 bunch of parsley (optional)
Approximately 4 ounces of spinach (roughly half a bag)
Pasta of choice
Parmesan cheese
salt/pepper
¼ cup of olive oil
1 clamshell of snap peas
Instructions
Begin by boiling water and cooking pasta until al dente. Remove from heat and allow noodles to cool.
In a blender or food processor combine roughly chopped mint, parsley, and spinach. Pulse quickly to chop leaves. Slowly add in olive oil, salt and pepper and water as needed to reach desired texture.
Pour sauce over pasta and add snap peas. Snap peas can be shelled or whole. Top with fresh grated parmesan cheese and enjoy a light & refreshing spring meal!
