Turmeric-spiced Oatmeal with Cardamom, Pears, and Persimmons
Ingredients
1 cup of old fashioned oats
1 teaspoon of turmeric powder
1 teaspoon of cardamom
½ tablespoon of brown sugar
1 teaspoon of cinnamon
½ teaspoon of nutmeg
1 pear finely chopped
2 persimmons chopped
1 teaspoon of vanilla extract
1 pinch of sea salt
Instructions
Add 1 and ¼ cups of water to a saucepan on the stove on medium heat and 1 cup of oats. Bring water to a boil and then reduce to a simmer to allow oats to cook.
In a separate saucepan add chopped pear, persimmons, brown sugar, cardamom, cinnamon, and nutmeg and turn to high heat. Allow fruit to cook down to a jammy consistency.
Add the turmeric, vanilla and sea salt to the oatmeal and stir.
Once oatmeal is fully cooked, and the fruit is the consistency of jam, add oatmeal to a bowl and top with persimmon/pear mixture. Enjoy hot with any other toppings of choice!
