Watermelon Radish Salad
Ingredients
1 large or 2 small watermelon radishes
2 Satsuma Mandarins
1 shallot
2 Golden Kiwis
The juice of 1 lemon
1 tablespoon of olive oil
Flaky salt
Instructions
Peel Satsuma Mandarins and Golden kiwis and slice into ¼ inch thick rounds.
Using a sharp knife or a mandolin, thinly slice rounds of watermelon radish.
Peel and slice shallot into thin pieces
Layer kiwis, Watermelon Radish slices, Satsuma Mandarin slices on a plate. Top with thinly sliced shallot.
Drizzle with olive oil and lemon juice and top with flaky salt.
